Lanys.com, a site devoted to the goings-on of our server.
Everlore, a great site for general info, magic, and quests. They have a pretty nice bestiary, as well.
EQ Atlas, a great map site, with general guides for each zone as well.
AllaKhazam's Magical Realm, my personal favorite for quest listings, as it's comprehensive and well-organized. He's also just added a pretty nice beastiary to the site.
Sanderson's Everquest Site, a pretty good site for maps of all zones.
EQ Traders, a site with trade skill information for everything, including where you can find all trade components.
The Caclking Klaknak, a pretty funny EQ humor site. I think he's going through some organizational issues at this time, but some of the stuff up right now is really funny and good to go through while you're anxiously awaiting updates.
